With local citrus fruits like Oranges, Kinnows and Maltas around during winters, it gets more fun to bake cakes and cookies. Last week I baked this super moist and fruity extra virgin olive oil orange cake to kick-start the Christmas baking mood at home. I couldn’t bake for almost 2 months before Christmas despite having numerous baking recipes to try this festive season. And then it was just about 10 days to go, I got that sudden rush of baking as much as I could. I baked Coconut Linzer Cookies, a three house Gingerbread village scene (that took me around 4 days of after-work effort) and this extra virgin olive oil orange cake. That may not sound much but that’s the most I could fit in a week. And I am happy that I did that at least. I still have got three more recipes to try. Although that wouldn’t make much sense as the Christmas has gone. But what the heck! There are still some days left in the year to end. And I still have to meet some of my friends at New Year’s, so I am going to bake something for them as well. Woohoo! with that on the mind, I am even more excited to meet my friends and treat them with the desserts and sweets I and going to make for them. Till then, I am leaving you guys with this recipe for delicious extra virgin olive oil orange cake.


- 3/4 cup extra virgin olive oil
- 2 eggs
- 1 cup greek yogurt
- 1/4 cup orange juice
- 1 tbsp orange rind
- 1 tsp vanilla extract
- 1 cup caster sugar
- 2 cups self raising flour
- oven dried orange slices, to decorate
- 1 cup icing sugar, to frost
- Preheat oven to 180 degree C. Grease and line a 9 x 5 inch loaf pan and keep aside.
- In a bowl, whisk together oil, eggs, sugar, orange juice, rind, yogurt, vanilla extract, until well combined.
- Sift in the flour and fold, until just combined. Pour the batter into prepared loaf pan and bake for about 1 hour, or until a skewer inserted into the centre of the cake comes out clean.
- Transfer the pan to a wire rack and let cake cool completely in pan. To frost, mix icing sugar with one tablespoon of water. Pour the frosting onto the cake and let drizzle through the sides of the cake. Top with oven dried orange slices.
- If you don't have self raising flour, replace it with equal amount of plain flour and 2 tsp baking powder.

I made this cake as per the recipe but for some reason it was a little pudding like in the inside. The flaky ness of a cake wasnt there. Could you help me understand why so?
Hi, did you use greek yogurt? You could substitute it with hung yogurt as well, if you don’t find greek yogurt. Also, please make sure that there are no lumps in the batter. Please let me know if this helps you.
