Melon & Feta Salad With Cherry Vinaigrette

Ingredients

For the salad

  • 250 gm watermelon chopped into thin slices
  • 250 gm muskmelon scooped into balls
  • 1 english cucumber deseeded and sliced
  • 200 gm feta crumbled
  • 1/2 cup fresh mint leaves roughly chopped
  • 1/2 cup fresh dill leaves roughly chopped
  • 1 cup rocket leaves
  • 1/2 cup salted roasted peanuts

For the cherry vinaigrette

  • 1 cup cherries pitted
  • 2 tbsp white wine vinegar
  • 1 tbsp dijon mustard
  • 2 tbsp extra virgin olive oil
  • 1 tsp lemon zest
  • 1 tsp dried oregano
  • 1 tsp red chilli flakes
  • salt to taste

Instructions

  1. To make salad, toss all the salad ingredients together in a large bowl. Place the tossed salad ingredients in a serving plate.

    To make vinaigrette, whiz all the ingredients together in a blender until smooth and keep aside.

    Drizzle the vinaigrette over salad, mix lightly and serve immediately.
