Eggs are my favorite and I like them in any form. So much so, I can eat eggs during any meal of the day. That’s the versatility about them. You can make them into omelets, poached, scrambled or even baked….
Roasted Red Pepper & Egg Galette
Days have become relatively warmer, though nights are still chilly, marked with cool wind blow at some days. We are welcoming Spring here with all open arms. It’s a relief from dreary cold winter days and feels refreshing and back to life. Red colorful and juicy strawberries are back in season. And we’ve started eating them a lot.
The color red doesn’t stop there, rather it excites us in another form. Lovely, vibrant, juicy and wonderfully colorful red pepper have flooded the vegetable carts and shelves in market. I am completely smitten off, both with their vibrant red color and the amazing sweet flavor.
And they roast so well. I personally like them roasted, and so Muhummara (roasted red bell pepper and walnut dip) has become my favorite party dip alongside bowls of olive oil covered hummus. Roasting the red pepper had been playing on my mind, but I wanted to try out something new this time besides bunging them into chips and dips platter.
So while I was flipping through the amazingly colorful and refreshing recipes from Ottolenghi’s Jerusalem, I straight away fell into love with these beautiful little treats. Ottolenghi is a genius when it comes to tossing fresh ingredients to make highly colorful treats, appetizing both to eyes and to the taste buds. The contrast of the red peppers and the egg yolk make these pastries stunningly beautiful. And they nonetheless taste brilliant. As a suggested alternative by Ottolenghi, I made two of the galettes with crumbled feta, reolacing eggs. And both tasted brilliant. We had them in Sunday brunch, we simply loved them.
Ingredients
4 medium red peppers {halved, deseeded and cut into thin strips}
3 small red onions {halved and cut into small wedges}
4 thyme sprigs
1 tsp ground cumin
1 tsp ground coriander
6 tbsp olive oil
1 1/2 tbsp parsley leaves
1 1/2 tbsp coriander leaves
250 gm puff pastry
30 gm sour cream
4 eggs, plus 1 lightly beaten egg
salt and black pepper
Directions
- Preheat the oven to 190 degree C. In a large bowl, mix peppers and onions with thyme leaves, ground spices, olive oil and a good pinch of salt. Spread out in a roasting tray and roast for 55 minutes, stirring couple of times during cooking.
- Remove from oven and stir in the fresh herbs. Adjust the seasoning and set aside. Turn the oven to 200 degree C.
- On a lightly floured surface, roll out the puff pastry to about 5 mm and cut out four 15 x 15 cm squares. Prick all over the squares and place them on a baking sheet lined with parchment paper. Leave to rest in fridge for at least 30 minutes.
- Remove the pastry from fridge and brush the top and sides with beaten egg. Using the back of a spoon spread half a tbsp sour cream over the pastry, leaving 0.5 cm border around the edges. Arrange the pepper and onion mixture on top of the sour cream, leaving the edges clean to rise and making a well in the center.
- Bake the galettes for 15 minutes. Take the baking sheet out of the oven and carefully crack an egg into the well in the center of each pastry. Return to the oven and cook for another 7-8 minutes, until the eggs are set.
- Sprinkle with cracked pepper, remaining herbs and drizzle with olive oil and serve hot.
The Day When Wishes Came True…
It was around 8 on Saturday morning and I was still sleepy inside the warmth of my quilt, when M called up. It was her 5th wedding anniversary and M and A wanted to celebrate it differently this time with all of their close friends. She asked, if we had any plan for the weekend. Generally, my weekends go crazier and more busy than the weekdays. And it comes very naturally to me that I get more active compared to weekdays. There is so much to do on weekends. Sometimes I feel like a headless chicken running around wanting everything to be done. But that’s not possible, you see.
Anyhoo, so coming back to the plan for the weekend, as soon as she asked the question, I started planning and prioritizing my activities at the back of my mind within fractions of seconds {this is how I fret…and I hate this about myself}. But then suddenly, She suggested if we could go visit this beautiful place called All American Diner at India Habitat Center for the brunch. Brunch on a weekend!!! That was something I had been longing on for a long time, and this place was special. Brunches are the wonderful meals, someone might have invented. I mean you can splurge on good food, chatting with friends for hours. I call it food spa.
So finally after a very long time, my wish was going to be true. And M and A had managed to call up everyone and we all headed towards our destination. While we were still not there, NP, another friend wished, how wonderful it would be if we could get the seats to sit outside.
When we reached the place, it was jam packed and we hadn’t booked the table and there was a waiting queue for 30 minutes. But we stuck to the idea of sitting in the patio and we were happy to wait for sometime for that. By the time we were waiting, we checked out the menu. There was also a buffet which looked quite enticing to most of us. We ere seated within 30 minutes and then it was time for the delicious grub. There were quite many options starting from cereals, fresh juices, salads, freshly baked breads, soups, gourmet cheeses, cold cut platters, eggs, sweet pastries, pasta, creamed vegetables, baked tomatoes and our ubiquitous south Indian breakfast menu. God, we just couldn’t stop.
After all every thing was so picture perfect. A bright sunny day of chilling winters, a close group of friends seated on white painted metal furniture under the parasol on a lush green patio, enjoying the good grub, sipping coffee and chatting for hours on a relaxed weekend. What else you need in life !!!
After the brunch, we also went for a little heritage visit to Qutub Minar, one of the tallest Minaret in New Delhi, the heart of India.
And the day was not over yet, we had bonfire at B’s place. This was another long due wish. And S cooked us a wonderful meal including Indian roasted chicken and Lentils on a makeshift open fire stove, one of his specialty.
Sometimes we have small wishes or dreams, which we keep on procrastinating for days or years sometimes. And then a magical day comes when they all get fulfilled, and that too when no one could guess for it. And this day was one such day.
