It is strange yet very pleasing to observe that baking in my own tiny kitchen and then some dabbling with photography and styling uplifts my mood every time I am down. I had been fighting with a bad fever and soar throat last week. Having no energy to walk up straight, I even missed on work for a couple of days too. Whenever there’s a weather change, I get this annoying virus which hits me badly. Anyways, today morning I was feeling a little better. That is when I saw a post on my Instagram wall from Simi of CulinaryOptics. Simi writes from US and is an exceptionally well photographer. Her pictures always uplift my mood. Her play of light and ability to see the beauty in the most mundane of things speaks for her work. She is a total inspiration for me. So when I saw her latest work on flowers and play of light, this idea came to my mind. That, why don’t I try some luck in capturing steam and lazy afternoon light. I tell you, it wasn’t easy at all to capture the steam but a very well written tutorial (again from Simi) helped me understanding the concepts better. Although it isn’t that beautiful the way she captures it all the time with finesse. But it was for her tutorial only that I could even muster some courage. I wanted to give this scene a mood of lazy Sunday afternoon when one would want to sit back and relax, sipping into some nice hot tea and nibbling onto home baked cookies. Talking of these delicious yet very healthy superfood cookies, these are made with loads of dry fruits, nuts, multigrain flour and oats. And these are lightly sweetened with honey. These lovely wholesome cookies could be a perfect afternoon snack or even one for breakfast too. Baking these cookies and then capturing them on my camera took my Sunday afternoon but I’ll say that this definitely made me feel better.


- 2 cups rolled oats
- 1 cup multigrain flour
- 1 cup almond meal
- 1/2 tsp baking powder
- 1 tsp cinnamon powder
- 3/4 cup olive oil
- 1/2 cup honey
- 1 tbsp vanilla extract
- 1/2 tsp salt
- 1/2 cup golden raisins
- 3/4 cup pistachios, roughly chopped
- Combine all the ingredients in a large bowl and mix well to make a cookie dough. Let rest for 15 minutes.
- Meanwhile, preheat the oven to 180 degree C. Line baking sheet with parchment paper and keep aside.
- Taking about 1/4 cup of cookie dough, roll into balls. Place the balls separated by 2 inches from each other on the prepared baking sheet. Flatten into disk using hands.
- Bake for about 18-20 minutes, until lightly golden.
- Take cookies out of oven and let cool completely. Cookies will become crisp once cooled completely.
