Granola is my favorite go to midweek-breakfast or a snack-at-the-work-desk choice. It’s even better if it is homemade. I do prefer to bake my own granola at home. All because I can control the purity of ingredients and the amount of sugar that goes into making one. So, I am constantly on a search to find new recipes for homemade granola. I just love this stuff so much. And there isn’t any doubt that nibbling homemade granola is quite an addictive thing. A couple of weeks back, I made this lovely peanut butter granola, because I just wanted to consume a jar full of peanut butter which was lying my kitchen cabinet for a very long time now. And I like peanut butter as well. So two of my favorite things combined up to make this lovely crunchy wholesome peanut butter granola. If you guys are still relying on the store bought stuff, I would seriously recommend baking your own granola at home. Trust me, you’d never buy it from the store again.

- 3 1/2 cups rolled oats
- 3/4 cup whole wheat flour
- 1 cup whole almonds
- 1 1/2 tsp baking powder
- 1/4 cup olive oil
- 3/4 cup peanut butter
- 2/3 cup maple syrup
- 1/4 cup milk
- 2 tsp vanilla
- Preheat the oven to 160 degree C and line a baking sheet with parchment paper.
- In a saucepan, mix together milk, peanut butter, vanilla, olive oil and maple syrup. Heat on a low heat until peanut butter is melted and the mixture makes a smooth liquid.
- In a bowl, add oats, flour, almonds, baking powder and the peanut butter liquid mixture and mix thoroughly.
- Spread the granola mix onto prepared baking sheet evenly and bake for about 30 minutes, stirring once midway during baking. Let cool completely in baking sheet. Break into small chunks and store in airtight container.
