There are days which are super packed and you just keep on juggling between things and trying to sneak out a few minutes break. And then there are days when you just sit back and relax, doing only things which you enjoy most at your leisure. Last weekend was one such weekend, when I was not having much to do and I had enough time to relax, sip tea, listen to my favorite music and bake some muffins in my kitchen. I didn’t even want to do the weekly chores like laundry. Although I got up at my usual morning hour, but my mind was relaxed and so was my body. I headed to my kitchen, hoping to bake these lovely whole wheat muesli muffins. To which I added my homemade peanut butter granola, whole wheat flour, honey and loads of nuts. And all these lovely ingredients made these muesli muffins just perfect for breakfast. And they came out quite moist, despite having a good amount of whole wheat flour. These muffins are on the lesser side of sweetness, so if you want them to be a bit more sweet, just increase the amount of honey, as you like. But I liked them as is, a little less sweet, so that you don’t feel them cloying and too much for breakfast. Definitely, these are not a sweet treat you’d want to eat in dessert. But these are just so good to be enjoyed with some hot tea in breakfast or in your evening snack. And they are so filling, that they’d keep you going for a very long time.


- 1 red apple, grated
- 1/3 cup honey, plus extra to serve
- 1/2 cup muesli,
- 1/2 cup chopped almonds
- 1/2 cup chopped walnuts
- 1 cup thick yogurt
- 2 tsp vanilla extract
- 1 tsp grated orange zest
- 1/4 cup fresh orange juice
- 1 cup whole wheat flour
- 1 1/4 cup plain flour
- 2 eggs
- 2 tsp baking powder
- 1/2 cup melted butter
- 1/4 cup muesli
- 1/4 cup flaked almonds
- 1/2 cup chopped walnuts
- 3 tbsp honey
- Preheat oven to 180 degree C. Place the apple, muesli, honey, yogurt, almonds, walnuts, vanilla, orange zest, orange juice in a bowl. Mix and let soak for 5 minutes.
- Meanwhile, make the topping by mixing all the ingredients.
- Place flours, egg, butter and apple mixture in a bowl. Mix until just combine, preventing over mixing. Spoon the mixture into well greased 12 hole muffin pan. Top evenly with muesli topping. Bake for about 20 minutes, or until cooked. Serve with extra honey.
