I generally love having wholesome and healthy breakfast and that too quite early in the morning, being an early riser. I’d rather be happy, if I am served whole grains and fresh fruits in the morning than some heavy oily parantha or poori. Of course I would binge on these yummy Indian breakfast once in a while. But not that I’d enjoy them on an everyday basis. My average daily breakfast consists of some good home baked granola paired with either yogurt or milk and topped with some nuts. Homemade granola is some pretty darn stuff, one would die for {here we’ve got a couple of recipes on the blog as well}. You need to bake it before you actually believe it. Trust me you’d never buy that crappy heavy branded sugar laden stuff from market, once you’re into home baked stuff. Another reason behind having granola in the morning is that it is quite a super fast breakfast, one could prepare if pressed for time. I call it the healthy fast food, you see. So, when I read about bircher muesli somewhere on internet, I was super excited to try it out the next morning. It’s a healthy concoction which was created by Maximilian Bircher-Benner, a swiss doctor and nutritionist, in order to introduce more raw fruit into his patients diet. The original recipe starts with soaking rolled oats overnight in water. But since then, the recipe has evolved a lot and has been adapted by many in their own version. The recipe which I am sharing involves soaking of oats in milk with some coarsely grated apples and chia seeds in order to give it more natural sweetness and flavour. And I love eating seasonal fruits a lot, so I topped them with some fresh cut mangoes and pomegranate seeds. And if you like, you could even add a dollop of whipped greek yogurt, a drizzle of lovely honey and some roughly chopped nuts. And this is how it becomes an excellent fuel to kick off the day.


- 100 gm rolled oats
- 2 tbsp chia seeds
- 1 red apple, peeled, cored and grated
- 350 ml milk (cow's/almond/soy, depending upon your preference)
- 1/2 tsp vanilla powder/paste
- 1 cup whipped greek yogurt
- 1 mango, diced into cubes
- seeds of one pomegranate
- handful chopped nuts (almonds/pistachios/walnuts etc.)
- honey, to taste
- The night before, put the oats and chia seeds into a bowl or container, pour over the milk, and mix in vanilla paste. Cover and keep in the fridge overnight.
- In the morning, divide the soaked oats into serving bowl. Top with diced mangoes, pomegranate seeds and whipped yogurt. Drizzle with honey and sprinkle with chopped nuts. Enjoy the goodness.
