With Christmas around the corner, there is so much joy and celebration all around. It feels almost surreal. People look happy and vibrant and are excited to see their family and friends. With all those get-togethers and celebrations comes along the excitement of planning parties. But sometimes, the menu planning and the cooking food for a huge group of people becomes overwhelming. And this madness can be tamed down easily if you act a little clever and make recipes which are easy to make, feed a crowd and take a very little time to come along. These Chicken & Chorizo Sausage Rolls are one such quintessential Christmas recipe which hit the right spot. I believe that Christmas is not complete without Sausage rolls. They are meaty, flavorful and perfect appetizers which you could serve your guests. You could either buy the puff pastry from the store or you could roll your own. I always prefer to buy the pastry from a store, because you could easily get a very good quality butter puff pastry in the frozen aisle of a supermarket. All you need is to mix the filling, roll into sausage shapes and wrap them with puff pastry, which just takes only five minutes of preparation time and then you let the oven do its own work. And you get hot, crispy, flaky, meaty sausage rolls ready to be dunked in your favorite relish or chutney.
- 500 gm Herbed Chicken Sausages, casings removed
- 100 gm chorizo, very finely chopped
- 1 tbsp dijon mustard
- 1 tbsp honey
- 1/4 cup parsley, chopped
- 2 sheets frozen puff pastry, thawed and halved
- 1 egg lightly beaten
- Salt and pepper, to taste
- Mix of sesame seeds, poppy seeds and caraway seeds, to sprinkle
- Preheat oven to 200 degree celsius. Prepare a large baking tray, lined with baking paper.
- In a bowl, mix together sausage meat, chorizo, parsley, honey, mustard, salt and pepper. Divide the mixture into 4 equal portions and roll into sausage shapes.
- Place each shaped sausage roll onto the centre of each puff pastry half. Brush the egg on the edges of pastry. Roll the pastry to enclose the filling and seal it properly. Place each roll onto prepared baking tray with seam side down.
- Brush the egg on each roll and sprinkle the seeds. Bake for about 35 minutes or until golden.
- Take out of oven. Cut with a sharp knife and serve with relish or chutney.
